Rava dhokla or suji ka dhokla belongs to the Indian cuisine. Dhoklas are very famous Gujarati dish and can be seen along the streets of Gujrat. Dhokla is a soft spongy and savoury cake which is seasoned with salt and spices and is steamed well until cooked. Further it is tampered with sugar, mustard seeds, chillies and curry leaves and garnished with grated coconut and Coriander leaves. They are super healthy and perfect snacking option for kids as well as adults.

Introduction
Dhokla is usually made with gram flour but this instant rava dhokla is made with suji or rava and is a more quick and healthier option. They can be steamed in plates and cut into square pieces if you want but I personally prefer to steam it in a bubble steamer just like idlis. They tastes best with sweet tamarind and jaggery chutney. You can also have them with tomato ketchup. Ingredients
Semolina Or sooji- 1/2 kg
Curd- 250 grams
Turmeric powder- 1/2 tablespoon
Salt- as per taste
Sugar- 2 tablespoon
Green chillies- 6 to 8Gram flour or besan- 2 tablespoon
Eno- 1 tablespoon
Refined oil- 2 tablespoon
Curry leaves- 15 to 20 leaves
Mustard- 1 tablespoon
Coriander leaves- 2 tablespoon (finely chopped)
Coconut- 2 to 3 tablespoon (finely grated)
Step by step recipe with images
1) Firstly take a mixing bowl and add 1/2 kg sooji Or semolina to it.
2) Now add 2 tablespoon of gram flour or besan to it.
3) Add 250 grams curd to it.
4) Mix them well.
5) Now add 1/2 tablespoon turmeric powder to it.
6) Now add salt as per taste.
7) Add a tablespoon of sugar to it.
8) Now add required amount of water to get idli like consistency.
9) Mix the batter well avoiding lumps.
10) Add 2 to 3 crushed green chillies to it.
11) Now add the chopped coriander leaves to it.
12) Mix it well. Rest it for an hour.
13)Add a tablespoon of eno to the batter.
14) add 2 tablespoon of water on top of it.
15) Mix them well.
16) Now take a bubble steamer and grease its plate with oil.
17) Pour the mixtures in the plates.
18) Steam the rava dhokla in the bubble steamer for 5 to 8 minutes.
19) Poke it to check whether it is perfectly cooked or not. If the knife is clean your dhokla is cooked perfectly.
20 Remove it from the plate with the help of a knife.
21) Your dhokla is perfectly cooked. Keep it aside for later.
22) Now heat a pan with 2 tablespoon of refined oil.
23) Turn the flame to low. Add 1 tablespoon mustard to it.
24) Add 15 to 20 curry leaves to it.
25) Add 2 to 3 slit green chillies to it.
26) Add 2 to 3 red chillies to it.
27) Stir it well and let it splutter in low flame.
28) Add 1 tablespoon sugar in it.
29) Add 1/4 th cup water to it.
30) Mix it well until boils.
31) Now pour the mixture to the rava dhokla.
32) Garnish it with coriander leaves.

34) Your rava dhokla is ready serve it along with tamarind chutney or tomato ketchup.
Tips and Tricks
1) The ratio of semolina and curd is 2:1.
2) You must mix the batter well avoiding lumps.
3) Water must be enough to get idli like consistency.
4) Grease the plate well.
5) Use a thin knife for removing the dhoklas from the plate or else the dhokla will break.
6)Tastes best when served hot.
7) Don’t overcook as it may turn the dhoklas hard.
