1) For this pasta veg recipes, firstly to boil the pasta, heat a pan with 5 to 6 cups of water. Add salt to it.
2) Bring the water to boil and add 2 cups (200 grams) of pasta.
3) Now boil the pasta for 5 to 6 minutes or as per the directions given on the pasta packet.
4) keep checking the pasta to make sure it is perfectly cooked . Don’t overcook the pasta as it will turn mushy.
5) Once the pasta is cooked perfectly, drain it well and keep aside.
6) Your pasta is perfectly cooked.
7)Now finely chop the carrots, beans ,onion and capsicum.
8) Now, heat the pan with 4 to 5 tablespoon of olive oil.
9) Add finely chopped green chillies and garlic to it and saute until it turns golden and aromatic.
10)Add the chopped vegetables to it and saute it for 2 minutes on medium high flame.
11) Add 1 tablespoon of soy sauce to it.
12) Add 1 tablespoon of vinegar to it. Turn down the flame to medium low.
13) Add half tablespoon of sugar.
14) Add 4 to 5 tablespoon of tomato ketchup to it.
15) Add 1 tablespoon of schezwan sauce and mix well.
16)Cook the veggies for 3 to 4 minutes.
17) Finally add salt as per taste.
18) Now add the boiled pasta in the veggies.
19)stir well until everything gets mixed properly.
20) Season it with 1/2 tablespoon black pepper powder and mix well.

Tips and Tricks
1) Cook the pasta in a large pot and make sure there is enough water in it. It will prevent the pasta from being sticky. You can also add a spoon of olive oil in the boiling water, this also prevents the pasta from being sticky.
2) Make sure the pasta is perfectly cooked. Boil it according to the time given in the pasta packet. Overcooking will make it sticky and as a result, it will loose it’s texture.
Healthier version
1) You can add more healthier veggies like corn and broccoli to the pasta.
2) You can avoid using green chillies completely, if you don’t like or are allergic to spicy food.
3) You can skip using sugar completely. If will not effect the taste of the pasta. Sugar is to balance the spices.
