Garlic fried rice recipe


Burnt Garlic rice as the name suggests is a very famous Chinese recipe whose star ingredient is garlic. This recipe turns out to be mouth watering and is made in minutes with minimum ingredients. This garlic version of fried rice will be loved by all garlic lovers out there. They pair best with Manchurian or chilli paneer and can be a superb option to make your dinner or lunch more flavoursome.

Introduction

In order to make this recipe, all you need to do is to boil the rice al dante. Then garlic is tossed well until golden brown. They are then kept aside and boiled rice is tossed along with veggies and sauces in the same way in which normal fried rice is made. Later the burnt garlic is added and mixed well. This recipe had become very famous these days. Most of the restaurant use basmati rice to make this recipe but I personally prefer using broken basmati rice as it tastes much better and turns out to be more flavoursome. Ingredients

Rice- 1 cup
Garlic- 10 to 12 cloves
Ginger- 1/2 tablespoon
Onion- 2/3 cup (finely chopped)
Carrot- 2/3 cup (finely chopped)
Beans- 2/3 cup (finely chopped)
Capsicum- 2/3 cup (finely chopped)
Vinegar- 1 tablespoon
Sugar- 1/2 tablespoon
Salt- as per taste
Soy sauce- 1 tablespoon
Schezwan sauce- 1/2 tablespoon
Black pepper- 1 teaspoon
Oil- 4 to 5 tablespoon

1) Firstly wash and soak the rice for 10 minutes. Drain them and keep it aside.

2) Now heat a pan with water.

3) Add the soaked rice in it.

4) Now add salt in it and stir well.

5) Boil it for 5 to 10 minutes on high flame until done.

6)The rice must be al dante i.e almost cooked.

7) Drain them well and set it aside for later. You can wash it under running water to avoid Stickiness.

8) Now heat a pan with 4 to 5 tablespoon oil.

9) Add 7 to 8 cloves chopped garlic in it.

10) Saute it for a minute on low flame.

11) Once it turns golden brown, strain them and keep it aside for later.

12) Now add 1 tablespoon of crushed ginger and garlic in it.

13) Add 2/3 cup of chopped onions in it.

14) Saute it on high flame for 2 minutes.

15) Now add 2/3 cup of chopped French beans in it.

16) Add 2/3 cup chopped carrots in it.

17) Add 2/3 cup of chopped capsicum in it.

18) Saute it well on high flame for 2 minutes.

19) Add a tablespoon of vinegar in it.

20) Add half tablespoon sugar in it.

21) Now add salt as per taste.

22) Saute them well and cook it for 2 minutes on high flame.

23) Now add a tablespoon of soy sauce in it.

24) Add 1/2 tablespoon of Schezwan sauce in it.

25) Stir and mix them well.

26) Now add the boiled rice in it.

27) Toss them well and cook it for a minute on high flame.

28) Add 1 teaspoon of black pepper in it.

29) Lastly add the burnt garlic in it.

30) Stir them well and turn off the flame.


31) Your yummy and tasty garlic rice is ready to be served. Enjoy it with paneer chilli or Manchurian.

Tips and Tricks

1) Don’t overcook the rice. It must be al dante.
2) Saute the garlic until golden brown and strain them well. Keep it aside for later.
3) You can use veggies of your choice.
4) Avoid using tomato ketchup.
5) Toss the rice well avoiding lumps.
6) Toss the rice after adding the tossed garlic.

Healthier version


1) You can use Brown rice instead of normal rice.
2) You can add more veggies in it.
