Introduction

Ingredients
Macaroni- 400 grams
Carrots- 1 cup (finely chopped)
Beans-1/2 cup (finely chopped)
Capsicum- 1/2 cup (finely chopped)
Onions- 1 cup (finely chopped)
Tomato sauce- 1/2 cup
Schezwan sauce- 2 tablespoon
Vinegar-1 tablespoon
Sugar-1 tablespoon
Black peppers-1/2 tablespoon
Salt- as per taste
Refined oil or olive oil- 4 to 5 tablespoon
Ginger garlic paste- 1 tablespoon
Garlic- 4 to 5 cloves (finely chopped)
Green chillies- 2 to 3 (finely crushed)
Maggi masala- 2 tablespoon
Oregano- 1 tablespoon
Chilli flakes- 1 tablespoon
Water- for boiling
Step by step recipe with images
BOILING THE MACRONI:
1) For this macaroni recipe, firstly boil the macaroni, heat a pan with 5 to 6 cups of water.
2) Add salt to it.
3) Add 2 tablespoon of oil in it.
4) Bring the water to boil and add 400 grams of macaroni.
5) Now boil the macaroni for 5 to 6 minutes or as per the directions given on the packet.
6) keep checking the macaroni to make sure it is perfectly cooked . Don’t overcook the macaroni as it will turn mushy.
8) Once done strain and keep it aside for later. Your macaroni is perfectly cooked.
TOSSING THE MACRONI
1)Now finely chop the carrots, beans ,onion and capsicum.
2) Now, heat the pan with 4 to 5 tablespoon of olive oil.
3) Once it gets heated, turn the flame to low and slowly add the finely chopped green chillies and garlic to it and saute until it turns golden and aromatic.
4) Add one tablespoon of ginger garlic paste and stir once.
5) Now add the chopped onions in it.
6) stir fry until it for a minute.
7)Add the chopped vegetables to it and saute it for 2 minutes on medium high flame.
8) Add salt as per taste.
9) Add 1 tablespoon of vinegar in it.
10) Add 1 tablespoon of oregano in the veggies.
11) Add 1/2 tablespoon of chilli flakes in it.
12) Add 1/2 tablespoon of black pepper in it.
13) Give them a good stir and cook them for another 3 to 4 minutes.
14) Now add 1 tablespoon of sugar in it.
15) Add 2 tablespoon of maggi masala in it.
16) Add 1/2 cup of tomato ketchup in it.
17) finally add 2 tablespoon of Schezwan sauce in it.
18) Stir them well and cook them for another 2 minutes in medium low flame.
19) Now add the boiled macaroni in it.
20) Give it a good stir and add salt if required.
21) Your macaroni is ready to be served. Tastes best when served hot.
Tips and Tricks
1) Cook the macaroni in a large pot and make sure there is enough water in it. It will prevent the macaroni from being sticky. You can also add a spoon of olive oil in the boiling water, this also prevents the macaroni from being sticky.
2) Make sure the macaroni is perfectly cooked. Boil it according to the time given in the packet. Overcooking will make it sticky and as a result, it will loose it’s texture.
Healthier version
1) You can add more healthier veggies like corn and broccoli to the macaroni
2) You can avoid using green chillies completely, if you don’t like or are allergic to spicy food.
3) You can skip using sugar completely. If will not effect the taste of the macaroni. Sugar is to balance the spices.
4) You can avoid using maggi masala if you want to.
