Introduction
Paneer bhurji is one of the most favourite north Indian cuisine. It is very common among the punjabi folks. This yummy and spicy recipe is made from cottage cheese or paneer. This quick and yummy recipe can be a perfect option for your breakfast.
Bhurji in English means scrambled. This recipe is made by tossing the scrambled panner along with onion, capsicum and tomatoes and is further seasoned with green chillies and salt, making it flavoursome, light and ideal meal option. Ingredients
Full fat Milk- 1 kg
Non fruit Vinegar- 2 tablespoon
Onions- 2 medium sized (finely chopped)
Tomatoes- 2 medium sized(finely chopped)
Capsicum- 1 (finely chopped)
Mustard oil- 4 to 5 tablespoon
Red chilli powder- 1/3 tablespoon
Turmeric- 1/3 tablespoon
Green chillies- 3 to 4 Or as per taste
Cream- 2 tablespoon
Salt- as per taste.
Step by step recipe with images
1) Firstly heat a heavy bottom pan with 1 kg of full fat milk.
2) Let it boil in medium high flame.
3) Once it boils and comes up, Add 2 tablespoon of vinegar in it.
4) Stir it well until the milk begins to curdle. Turn off the flame and make sure the solid gets seperated from the whey. The whey becomes must become clear and turn greenish in colour.
5) Now take a strainer and pour the Curdled milk in it. Pour cold water to remove the smell of vinegar. Keep it aside for later.
6) Finely chop the onions, capsicum and tomatoes.
7) Now heat a pan and add 4 to 5 tablespoon of mustard oil. Heat it well until smoke releases. (Mustard oil gives it a dhaba style taste)
8) Now turn the flame to low. Slowly add the chopped onions in it.
9) Cook them for until they turn golden brown.
10) Now add the chopped capsicum in it and cook it for another 2 to 3 minutes.
11) Stir them well and add the chopped tomatoes in it.
12) Cook them well until they become soft and mushy.
13) Add 1/3 tablespoon turmeric powder in it.
14) Add salt as per taste.
15) Add 1/3 tablespoon red chilli powder to it.
16)Add crushed green chillies to it and give them a good stir and let it cook for another 2 minutes.
17) Now crumble the homemade panner with your hand.
18) Add them in the pan and give them a good stir. Avoid overcooking the panner.
19) Now add 2 tablespoon of fresh cream in it and and mix them well.
20) Stir well until done.
21) Add coriander leaves and stir well.
22) Your yummy Dhaba panner bhurji is ready to be served with fulka or laccha paratha. Tastes best when served hot.
Tips and Tricks
1) Don’t add more than 2 spoons of vinegar as it will alter the taste of the panner.
2) Don’t overcook the panner at any stage. It will make it hard and chewy.
3) Turn off the flame as soon as you mix the cream or else it will turn oily instead of creamy.
4) Avoid using any masala as dhaba style bhurji is made without any extra masalas.
Healthier version
1) You can use 1/2 cup milk instead of fresh cream
2) You can totally avoid using cream or milk.
