Summers are one of my most favorite season of the year just because of one reason and that is Mangoes! Who doesn’t loves mango and not just mangoes I love experimenting each and every dish I could using them. The kind of flavors and richness it adds to any dish is beyond explanation. One of such recent experiments I made was this yummy and mouthwatering dessert recipe Mango biscuits pudding. This no bake recipe requires minimum time and tastes so good. They recipe is made with minimum Ingredients that are easily available in every kitchen. Everyone in my family loved it specially my li’ll brother who is fond of mangoes.
Introduction
This recipe is simply made by crushing and combining the crushed biscuits with butter. And for the pudding all you need is mango puree and some ice-cream which are blended well until well combined. The two elements are then layered well and garnished with diced Mangoes and pistachios. The dessert is then Refrigerated overnight and your heavenly treat is ready for consumption. This Mango biscuit pudding is a perfect dessert recipe and will surely be loved by one and all. Whether it’s a home party or simply a date night, You can easily impress your loved ones with this. Ingredients
Biscuits- 15 to 20
Mangoes- 2 medium sized
Ice cream- 2 cup (vanilla)
Melted butter- 4 tablespoon
Sugar-4 tablespoon
Garnishing:
Mango- 1 medium sized (diced)
Pistachios- 8 to 10 kernels (finley chopped)
Step by step recipe with images
1) Firstly take 15 to 20 biscuits.
2) Transfer them in a mixer jar.
3)Blend them coarsely.
4)Transfer the blended biscuits in a bowl.
5) Add 4 tablespoon melted butter in it.
6)Mix them well using a spoon.
7) Keep it aside for later.
8)Now take 2 ripe Mangoes.
9)Peel them and Transfer the pulp in a mixer jar.
10)Add 3 to 4 tablespoon sugar in it and blend them well into a smooth paste.
11) Transfer the mixture in a bowl.
12)Add 2 cups of melted vanilla ice cream in it.
13)Mix them well until well combined.
14) Now keep it aside for later.
15)Now take a baking dish and cover it with butter paper.
16)Now add the biscuits mixture in it.
17) Flatten them evenly with the help of spatula making sure it is forms an even layer.
18) Now pour the Mango and ice-cream mixture on top.
19) Layer it evenly.
20)Now add the chopped Mangoes on top.
21)Garnish them with pistachios and Refrigerate it over night.
22)Once done ,It’s time to demould it.
23) Simply pull out the butter paper and it’s done.
24) Slice them into small peices and Garnish each slice with mint leaves and your yummy and delicious Mango pudding is ready to be served.
Tips and Tricks
1)Blend the biscuits coarsely.
2)Adjust the quantity of sugar in the Mango puree according to the sweetness of the Mango.
3)Make sure the vanilla ice cream is in a semi liquid state .
4)Layer the pudding evenly for a better representation of the dish.
5)Make sure the diced Mangoes are sweet or else it will ruin the taste.
6) Garnishing with pistachios adds crunch to the dish.
Healthier Version
1)Use whole wheat biscuits instead of normal biscuits .
2)Avoid using sugar in the puree and opt for sweet and ripe Mangoes.
