Introduction
Panner lababdaar is a North Indian cuisine which is made with cottage cheese. It is a healthy dining recipe which tastes best with naan or chapati. It is made by coating the panner cubes into rich and yummy gravy. The gravy is mixed with grated paneer which makes it much more creamy and satisfying.

Ingredients
Onion- 4 to 5 medium sized
Garlic- 8 to 10 cloves
Red chillies- 2 chillies
Green chillies- 2 chillies
Tomatoes- 2 to 3 medium sized
Green Cardamom- 2 to 3 cardamom
Black cardamom- 1 cardamom
Cinnamon- 1 small stick
Black pepper- 4 to 5
Paneer- 400 grams
Salt -as per taste
Kitchen king masala- 1 tablespoon
Cashew nuts- 8 to 10 peices
Refined oil- 2 tablespoon
Desi ghee- 4 tablespoon
Turmeric powder- 1/2 tablespoon
Sugar -1/4 tablespoon
Fresh cream- 4 tablespoon
Water- as per requirements
(Kitchen king masala is a mixture of Coriander, Cumin, Turmeric, Black pepper, Cinnamon, Asafoetida, Cardamom, Garlic, Ginger powder, Red Chilli and Mace.)
Step by step recipe with images
1) Chop the onions and peel off the garlic cloves.
2) Roughly chop the tomatoes into small pieces.
3) Heat a pan with 2 tablespoon of oil.
4) Add green cardamom, black cardamom, cinnamon and black pepper and let it splutter.
5)Slowly add the chopped onions and garlic to it.
6) Saute them well until they turn golden brown and mushy.
7)Now add the roughly chopped tomatoes in it and cook them in medium high flame for 2 minutes.
8) Now reduce the flame to low add 1/4 cup of water and cover the mixture with a lid for 5 minutes until they turn mushy.
9)Remove the lid and add green, red chillies and cashew nuts to the mixture and saute well.
10) Transfer it to a plate and let it cool down.
11) Now take 400 grams paneer (cottage cheese) . Dice 300 grams of paneer into small pieces and grate 100 grams of paneer.
12) Once the mixture has cooled down, transfer it to a mixer jar.
13) Blend it into a thick paste and keep it aside.
14) Now heat a pan with 2 spoon of refined oil and 4 spoons of desi ghee.
15) Reduce the flame to low and slowly add the blended paste to it.
16) Add salt as per taste.
17) Add half tablespoon of turmeric powder. Stir well.
18) Turn the flame to medium high and keep in stirring the mixture for 5 minutes.
19) Let the oil seperate and keep cooking the mixture for another 2 minutes.
20) Now add the grated 100 grams of paneer in it.
21) Mix them well.
22) Add one tablespoon of kitchen king masala.
23) Add 1/2 cup of water to make the gravy. Stir them well.
24) Add the paneer cubes to it and stir well.
25) Cook it for 2 minutes in low flame.
26) Add 4 tablespoon of fresh cream and stir well so that everything gets mixed properly.
27) Finally add 1/4 tablespoon of sugar and mix them well. It will add colour and sweetness to the gravy.
28) Transfer it to a bowl and serve hot with naan or chapati. Tastes Best when served hot.
Tips and Tricks
1) Don’t alter the quantities of onion and tomatoes. It will alter the taste of the gravy.
2) The ratio of grated and diced paneer should always be 1:3.
3) While adding cream turn the flame to low or else it will turn oily instead of creamy.
4) Don’t add more than half cup of water it will make the gravy thin.
5) Instead of kitchen king , you can use freshly available masalas in your kitchen. Keep a count on quantities.
