Soup is served across the world due to its major health benefits. From clear soup to hot and sour to the most loved Manchow, soup has been a part of every healthy dinner. Manchow soup belongs to the Chinese cuisine and tastes yum.
Introduction
Manchow soup is made by adding a lot of veggies and finally balancing it well with sauces to give a perfect taste. Further it is served along with fried noodles to make it taste more crunchy and delicious. It has been one of the most favourite soup recipes since long and is my personal favourite too. Step by step recipe with images
Boiling the noodles
1) Firstly heat a pot with 4 to 5 glasses of water.
2) Add salt to it.
3) Add 1 to 2 tablespoon oil in it and let it boil at high flame for 5 minutes.
4) When the water has boiled, lower the flame and add the noodles in the boiling water. Cook the noodles for 2 to 3 minutes and keep checking it to avoid Overboiling.
5) Finally drain off the excess water and keep the noodles aside so that the remaining water dries off.
Frying the noodles
1)After 10 minutes, spread the noodles on a plate.
2) Add 3 to 4 tablespoon of cornflour to the noodles.
3)mix them all together.
4) Heat a pan with 2 cups of oil.
5) Bring the flame to medium and add the noodles to the oil.
6) Fry for 4 to 5 minutes and let it harden and become crispy. Turn and repeat on the other side as well.
7) Once the noodles turn golden and crispy, keep them aside. Your fried noodles are ready
Final steps:
1) Firstly chop the veggies evenly.
2) Crush the ginger, garlic and chillies together.
3) Now heat a pan with 4 to 5 tablespoon of refined oil.
4) Add the crushed ginger, garlic and chillies to it. Saute it for a minute or so until it turns golden brown and aromatic.
5) Turn the flame to medium and slowly add all the veggies in it and saute well.
6)Add 1/2 tablespoon of salt and mix well. Cook for another 5 to 6 minutes until the veggies turn soft.
7) Add 1 tablespoon of vinegar and mix well.
8) Add 1 tablespoon of sugar.
9) Now add 5 to 6 tablespoon of tomato ketchup.
10) Add 2 tablespoon of soy sauce. Give it a good stir and turn the flame to low.
11) Now take a glass of water and add 3 to 4 tablespoon of cornflour to it and mix it well. Add 3 tablespoon if you want a flowy consistency and 4 tablespoon of cornflour if you want a thick soup.
12) Now add 6 to 7 cups of water to the veggies and give it a good boil. Let it simmer for 8 to 10 minutes.
13)Now slowly add the cornflour mixture to the veggies stock and keep on stirring it to avoid lumps.
14) Let it boil for 2 to 3 minutes. Once it starts thickening keep on stirring it to avoid lumps.
15) Now once it turns glossy and thick, add 1/4 tablespoon of black pepper to it.
16)Finally add salt as per taste.
17)Garnish it well with freshly chopped coriander leaves.
18)Add some fried noodles on the top and mix well. your soup it ready to be served. Tastes best when served hot.
Tips and Tricks
1) Don’t over cook the noodles. Boil it perfectly.
2) Fry the noodles at medium high to low flame. It will make them more crispy.
3) Cook the soup until it turns glossy.
4) Don’t alter the quality of cornflour and water.
5) Frying the noodles take a lot of time. Try to be patient for best results.
6) keep stirring the soup while adding cornflour orelse it will form lumps.
Healthier version
1) You can totally avoid the fried noodles.
2) You can reduce the quantity of the cornflour if required.
3) You can add more healthy veggies like broccoli, corn and mushrooms to the soup.
4) You can skip using green chillies and instead use more of black pepper.

- Tomato ketchup- 5 to 6 tablespoon
- Soy sauce – 2 tablespoon
- Sugar- 1 tablespoon
- Vinegar- 1 tablespoon
- Salt – as per taste
- Cornflour- 5 to 6 tablespoon
- Water- as per requirements
- Black pepper- 1/2 tablespoon
- Noodles- 2 to 3 blocks
- Refined oil- 3 cups
