Introduction
One of the most favourite and traditional food of Jharkhand and Bihar, litti choka has become popular all across India and even abroad. Litti choka is a spicy stuffed dish dipped in desi ghee and served along with allu choka and tomato chutney. It is a complete meal recipe from the state of bihar. The stuffing is made from roasted gram flour which has a lot of health benefits. Litti can be made in several ways, it can be roasted on direct flame, can be fried or baked in OTG.
This litti choka recipe can be the perfect option for you lunch or dinner and will surely satisfy the needs of all young as well as old members of the family. This litti choka is made by using whole wheat flour and sattu which are too healthy and nutritious. Ingredients
For Litti dough:
Whole wheat flour-250 grams
Oil- 4 to 5 tablespoon
Salt- 1/2 tablespoon or as per taste
Water- as per requirement to knead the dough.
For Litti stuffing:
Onion seeds- 1/2 tablespoon
Roasted gram flour(sattu)- 200 gram
Garlic- 4 to 5 cloves (finely crushed)
Green chillies- 2 to 3 (finely crushed)
Salt- 1/2 tablespoon or as per taste
Mustard oil- 2 tablespoon
Mango pickle masala – 1 tablespoon
For allu choka :
Potatoes- 6 to 7 medium sized
Onion- 1 medium sized (finely chopped)
Green chillies- 2 to 3 or as per taste
Fresh Coriander- 1 tablespoon
Roasted cumin powder(jeera powder) -1/2 tablespoon
Dhaniya powder-1/2 tablespoon
Salt-as per taste
For tomato chutney:
Tomatoes- 3 big sized
Onion- 4 medium sized (finely chopped)
Green chillies- 2 to 3 or as per taste
Fresh Coriander- 1 tablespoon
Roasted cumin powder(jeera powder) -1/2 tablespoon
Dhaniya powder-1/2 tablespoon
Salt-as per taste
Sugar- 1 tablespoon
Step by step recipe with images
Litti dough
1) Take a bowl and add 250 grams of wheat flour.
2) Now add 2 tablespoon of oil in it and mix well.
3)Add 1/2 tablespoon of salt in it.
4)Mix everything properly.
5)Slowly add water and start kneading the dough.
6) Add water as per required, knead the dough.
7) Knead the dough until it turns smooth and soft. Keep it aside and let it rest for 30 minutes
Sattu stuffing
1) Take a bowl and add 200 grams of sattu(Roasted gram flour)
2)Add one tablespoon crushed green chillies and garlic to it.
3) Add 1/2 tablespoon cumin powder to it.
4) Add 1/2 tablespoon of salt to it.
5)Add 1/2 tablespoon onion seeds (kalaunji) to it.
6) Add 4 to 5 tablespoon of mustard oil in it.
7) Add 1 tablespoon pickle masala to it. (You can use aamchur instead)
8) Mix it well with your hands.
9) your stuffing is ready.
Litti stuffing and shaping
Litti stuffing and shaping:
1) After 30 minutes, make small balls from the dough.
2) Roll the balls in small thick roti of 5 to 6 cms Or press the sides to form a cup.
3)Now add 1 tablespoon of sattu stuffing in it.
3) Pleat the dough from sides to seal it well ball and shape the balls. Flatten it with your palms to give it a perfect shape.
6) Your litti is ready to be cooked.
Roasting the litti
1) Take a Gas oven and preheat it for 5 minutes.
2) Add the littis on the tray one by one.
3) Place all the littis on the tray.
4) Turn the flame to medium high and cover it with the lid.
5) Cook it for 5 minutes and then remove the lid and flip the littis on the other side.
6) Cover and cook it again for 5 minutes
2) Once the litti breaks and you can see charred spots it, they are perfectly cooked and ready to be served.
Tomato chutney
1) Add 4 medium sized tomatoes in a pressure cooker.
2) Add 1/2 cup of water in it.
2) Pressure cook for 1 whistle and release the excess steam.
3) Open the lid of the cooker and peel of the skin of the tomatoes and let it cool down for 5 minutes.
4) Now take a bowl and add the tomatoes in it. Mash it well.
5) Remove the excess pulp.
5)Add 1/2 cup water in it.
6) Add 1/2 tablespoon coriander powder in it.
7) Add 1/2 tablespoon of cumin powder in it.
8) Add salt as per taste.
9) Now add 1 finely chopped onions to it.
10) Add chopped green chillies to it.
11) Add chopped coriander leaves to it.
12)Add 1 tablespoon of sugar in it.
13) Mix everything properly.
14) Your chutney is ready to be served.
Allu chokha
1) Firstly boil the potatoes in a pressure cooker.
2) Now peel and add the potatoes in a bowl
3) Mash them well.
4) Now add 1 medium sized chopped onions in it.
5)Add crushed green chillies to it.
6) Add chopped coriander to it.
6)Add 1/2 tablespoon of roasted cumin powder (jeera powder) to it.
7)Add 1/2 tablespoon of coriander powder (sukha dhaniya powder) to it.
8)Add salt as per taste.
9) Mash and mix it well.
10) Your allu choka is ready.
Serving the littis.
1) Take a plate and add littis in it. Press to break the litti and add a tablespoon of desi ghee in it.Serve it along with choka and chutney and enjoy the delicious spicy recipe. Tastes best when served hot.
Tips and Tricks
1)The litti need to be cooked very well, otherwise the dough will remain raw from inside.
2) Fill generous amount of sattu inside the litti as it will taste good.
3) Simply dipping the littis in a bowl of ghee will make it taste better.
4) The dough needs to be soft else the litti will turn hard.
5) Try using freshly blended masala for more authentic taste( Jeera and dhaniya powder)
Healthier version
1) Instead of allu choka, you can make eegplant (baigan) choka.
2) You can simply avoid using ghee.
