Introduction
This recipe is made by simply adding the boiled sweet corn in tomatoes and onion greavy, which is further made thicker by adding cottage cheese to it. This recipe tastes best with naan Or laccha paratha. Ingredients
Sweet corn- 150 grams
Onion- 1 medium sized
Capsicum- 1 medium sized
Tomato- 2 medium sized
Cashew nuts- 7 to 8 nuts
Paneer(cottage cheese) – 50 grams
Cumin seeds- 1/4 tablespoon
Ginger garlic paste- 1 tablespoon
Turmeric- 1/2 tablespoon
Red chilli powder- 1/4 tablespoon
Dry coriander powder- 1/2 tablespoon
Salt- as per taste
Green chilli- 3 to 4 or as per taste
Coriander leaves- 1 tablespoon
Sugar – 1/2 tablespoon.
Refined oil-5 tablespoon.
Step by step recipe with images
Boiling the baby corn:
1) Firstly heat a pan with 4 cups of water.
2) Add 200 grams of baby corn to it and give it a good boil.
3) Strain the sweet corn with the help of a strainer.
4) Keep it aside for later.
Preparing the greavy:
1) Finely chop the onions and capsicum into small pieces.
2) Take a blender and add two tomatoes along with 7 to 8 cashew nuts.
3) Blend it into a paste.
4) Now heat a pan with 5 to 6 tablespoon of refined oil.
5) Now add 1/4 tablespoon of cumin seeds and let it splutter.
6) Reduce the flame to low and slowly add the chopped onions to it. Stir them well.
7) When it turns golden brown, slowly add the chopped capsicum to it. Cook it for a minute or so.
8) Now add 1 tablespoon of ginger garlic paste, stir them well.
9) Add 1/2 tablespoon of Turmeric powder. Stir them well.
10) Now add 1/4 tablespoon of red chilli powder.
11)Add 1/2 tablespoon of dry coriander powder.
12) Finally add salt as per state and give them a good stir.
13) Once the oil starts Separating, Add the blended paste or puree to it.
14) Keep the flame at medium high and keep on stirring it for 4 to 5 minutes until the water evaporates.
15) Once the puree or paste starts thinking, reduce the flame to low.
16) Cook it well until oil seperates.
17) Now add chopped green chillies to it.
18) Add 1/4 cup of water to it to get the perfect consistency.
19) Now add 50 grams of crumbled paneer to it.
20) Give them a good stir and cook it for another 2 minutes.
21) Now add 1/2 tablespoon sugar to it and mix it well.
22) Finally add 200 grams of sweet corn to it and stir them well. .
23) Garnish it well with coriander leaves.
24) You corn dum masala is ready. Serve it hot with chapati or laccha paratha.
Tips and Tricks
1) Make sure you blend the puree well.
2) Keep on stirring the greavy while adding the ingredients.
3) Try to make the cottage cheese at home, it gives the best results.
4) You can add cream if you want to make the greavy more creamy.
