Bharta is defined as something that is mashed and cooked. This Aloo ka bharta is a very simple recipe made with boiled and mashed potatoes which are cooked with herbs and spices. They can simply be paired with chapatis, daal and rice or can be stuffed inside sandwich and dosas as well. They require minimum Ingredients and can be made in minutes. This recipe was originated in Bihar and is famous in Bengal and Rajasthan as well. This typical Desi recipe is not just simple but tastes so good. I prefer cooking them in mustard oil for enhancing the taste of the dish. You can even add peanuts and coconut if you want.
Introduction
This recipe is made by simply boiling and mashing potatoes and then cooking them in mustard oil along with onion and tomatoes. Some masalas and chillies are added to it for more flavors and then Garnished with coriander leaves. Ingredients
Potatoes- 8 ( medium sized)
Onion- 1 (medium sized, finely chopped)
Tomatoes-
Mustard oil- 4 tablespoon
Cumin seeds- 1 teaspoon
Curry leaves- 5 to 6 leaves
Ginger garlic- 1/2 tablespoon ( crushed)
Tomatoes- 1 (medium sized, finely chopped )
Green chillies-2 (finely chopped)
Turmeric-1/2 teaspoon
Salt- as per taste
Red chilli powder- 1/2 teaspoon
Garam masala- 1 teaspoon
Coriander leaves- for Garnishing
Step by step recipe with images
1) Firstly boil and peel 7 to 8 potatoes.
2)Mash them well using a masher and keep it aside for later
3)Heat a pan with mustard oil and let it burn.
4) Now add a teaspoon of cumin seeds in it.
5)Now add 5 to 6 curry leaves in it and let it splutter
6)Now add 1/2 tablespoon crushed ginger garlic in it.
7) Cook it for a minute on low flame until golden brown and aromatic.
8) Now add 1/2 cup chopped onions in it.
9)Cook them for 2 to 3 minutes on medium high flame until it turns golden brown.
10) Now add chopped tomatoes in it.
11)Cook them on medium high flame for 2 to 3 minutes until mushy.
12)Now add green chillies in it and stir well.
13)Now add 1/2 teaspoon turmeric powder in it.
14) Add salt as per taste.
15)Add 1/2 teaspoon red chilli powder in it.
16) Add a teaspoon of Garam masala in it.
17)Mix them all together and cook for half a minute on medium flame.
18) Now add the mashed potatoes in it.
19) Mix them well.
20)Once done sprinkle some coriander leaves on top.
21)Your Desi Aloo bharta is ready to lighten up your boring daal chawal. Enjoy.
Tips and Tricks
1) Don’t overcook the potatoes as the dish will turn sticky.
2)Mash the potatoes well.
3)Add the potatoes only when the tomatoes turns mushy and oil separates.
Healthier Version
1) You can simply skip using red chilli powder, if you are allergic to spicy food or preparing it for children.
