One of the most healthiest breakfast recipe, Rava idli is a famous recipe originated in Bangalore and karnataka. This recipe comes under South Indian cuisine and tastes very delicious. It is soft in texture and pairs best with coconut or daal chutney. It has a bit of crunch in it as well which is due to the veggies and cashew nuts added in it. They are a perfect recipe for tiffins and breakfasts specially to impress your relatives and loved ones. This is my version of the recipe, you can simply add more veggies of choice to make it a more healthier one.
Introduction
This recipe is made by simply roasting semolina along with veggies, nuts and spices and then combining it with curd and water to form a perfect batter. They are then poured in idli plates and steamed until done. This is a quick recipe which requires no fermentation of the batter. I have used Eno for quick fermentation, you can also use baking soda if you want. Ingredients
Refined oil or Desi ghee- 2 tablespoon
Mustard seeds-1/2 tablespoon
Chana daal -1 tablespoon
Curry leaves- 8 to 10 leaves
Green chillies-2 to 3
Carrots- 1/2 cup
Cashew nuts- 15 to 20 nuts
Suji or rava- 1 cup
Curd- 1 cup
Water – 1 cup
Coriander leaves- 1 tablespoon
Salt-as per taste
Eno – 1 sachet
Step by step recipe with images
1)Heat a pan with oil.
2)Add 1/2 tablespoon mustard seeds in it and let it splutter.
3)Now add 1 tablespoon Chana daal in it.
4)Add 8 to 10 curry leaves in it and cook it for 10 to 12 seconds.
5)Add 2 to 3 chopped green chillies in it.
6)Cook them on high flame for a minute.
7)Add 1/3 cup of chopped carrots in it.
8)Add 4 to 5 crushed cashew nuts in it.
9)Cook them on low flame for 4 to 5 minutes.
10)Now it’s time to Add a cup of semolina in it.
11)Mix and cook it well on low flame for 2 to 3 minutes until it changes colour and turns aromatic.
12)Turn off the flames and Rest it for 5 minutes.
13)Now transfer the mixture in a bowl.
14) Add 1 cup of Curd in it.
15)Add a tablespoon of chopped coriander leaves in it.
16)Mix them well avoiding lumps.
17)Now add 1 cup of water in it.
18)Stir well avoiding lumps.
19) Now add salt as per taste.
20)Mix them well.
21)Finally, add a sachet of Eno in it.
22)Add a tablespoon of water on top.
23)Once it starts bubbling, start combining it with the rava mixture.Once it turns a little frothy , the batter is ready.
24)Brush some oil on the idli stand tray.
25)Place half cashew on the centre of the moulds as shown above.
26)Now pour the batter on each idli mould.
27) Heat the pot with 4 to 5 cups of water until it boils.
28)Stack each idli plate and place it on a preheater pot with water.
29)Cover the lid and steam them for 10 minutes on medium flame.
30)Once done, check it by inserting a toothpick, if it comes out clean , they are perfectly cooked orelse steam for some more time.
31)Now slowly demould the idlis with a knife.
32) Once done, your healthy and delicious rava idli is ready to be served. Enjoy them with sambar and chutney of your choice.
Tips and Tricks
1)Keep the flame at low with roasting the suji or rava.
2)The quantity of rava and Curd should be 1:1
3)After adding water make sure there are no lumps in the batter.
4)After adding Eno, add some water on top to allow it to bubble.
5)Mix the Eno with the batter and immediately pour them in the idli plate.
6)Brushing some oil in the idli plate is a must.
7)preheat the idli pot with water for 10 minutes before adding the idli plates in it.
8)Cook the idlis until the toothpick comes of clean. It will roughly take 10 to 12 minutes.
Healthier Version
1) Use Desi ghee instead of Refined oil.
2)Add more veggies of your choice
