Firstly peel and wash the carrots.
Grate them evenly using a grater Or a food processor.
Now heat a heavy base pan in a medium high flame and add 3 to 4 tablespoon of desi ghee in it.
Now add the grated carrots to it and stir them well.
Now cover it well with a lid and cook for 5 to 10 minutes until it softens.
Now remove the lid and stir it well.
Add 1/2 litre of full fat milk to it.
Cook it in medium high flame for 5 to 10 minutes.
When it starts to boil, reduce the flame to low and let it cook for 10 minutes.
Add cardamom seeds to it.
Add raisins in it so that it puffs up and softens perfectly.
Cook until the 70% of the milk has reduced.
Now add 1/2 cup fresh cream to it and mix mell.
Now add 200 grams of sugar (Or as per your taste) and mix it well with a spatula.
Cook it for another 10 to 15 minutes until it reduces to a pudding like consistency.
Now add the chopped dry fruits to it.
Cook it well and keep stirring for another 10 to 15 minutes in low flame until oil seperates.
Finally the gazar halwa is ready to be served. Tastes best when served hot.
