Noodles frankie

Ingredients
  

  • Carrot- 1/2 cup (finely chopped)
  • Beans- 1/2 cup (finely chopped)
  • Onion- 3 medium sized( finely chopped)
  • Capsicum- 1/2 cup (finely chopped)
  • Noodles- 200 grams
  • Garlic-7 to 8 cloves
  • Ginger- 1 inch
  • Green chillies- 6 to 7
  • Vinegar- 1 tablespoon
  • Tomato ketchup- 5 to 6 tablespoon
  • Soy sauce- 1 tablespoon
  • Green chilli sauce- 1 tablespoon
  • Black pepper powder- 1/2 tablespoon
  • Refined flour-100 grams
  • Wheat flour- 100 grams
  • Semolina- 50 grams
  • Salt- as per taste
  • Sugar- 1 tablespoon
  • Refined oil- as per requirements

Instructions
 

Boiling the noodles

  • Firstly heat a pan with 3 cups of water.
  • Add a tablespoon of salt to it.
  • Now add a tablespoon of refined oil to it.
  • Now add 200 grams of noodles to it.
  • Boil it for 2 to 3 minutes on medium high flame.
  • Check to see if it’s done or not.
  • Drain the noodles when it’s 80% cooked.
  • Keep it aside for later.

Tossing the noodles

  • Finely chop the beans, carrot, onion and capsicum into Julienne. Finely chop the ginger, garlic and 3 to 4 green chillies.
  • Take a pan and add 5 to 6 tablespoon of refined or olive oil.
  • Turn the flame to medium high. Add the chopped ginger, garlic and 3 to 4 green chillies to it.
  • Saute it well until it turns golden brown and aromatic.
  • Now add the chopped carrot and French beans in the pan.
  • Saute it for 2 to 3 minutes.
  • Now add the capsicum and onions to it.
  • Add a tablespoon of vinegar to it .
  • Add a tablespoon of sugar to it.
  • Add salt as per taste.
  •  Cook it well for 3 to 4 minutes on medium high flame.
  • Now add a tablespoon of soy sauce to it.
  •  Add 5 to 6 tablespoon tomato ketchup to it.
  • Add a tablespoon of chilli sauce to it.
  • Stir it well and cook for a minute until oil seperates.
  • Now add the boiled noodles to it.
  • Stir and mix it well on medium high flame.
  • Now add 1/2 tablespoon of black chilli powder to it.
  • Mix it well and cook for a minute. Your stuffing is ready.

Wrap preperation

  • Take a mixing bowl and add 100grams of refined flour and 100 grams of wheat flour to it.
  • Add 50 grams of semolina or sooji to it.
  • Add salt as per taste.
  • Mix them well with your hands.
  • Add 2 to 3 tablespoon refined or olive oil to it.
  • Mix them well with your hands.
  • Now slowly add required amount of water and knead it into a soft dough.
  • your dough is ready. Rest it for an hour.
  • Now take a ball sized dough.
  • Flatten it into a thin chapati using a rolling pin.
  • Heat a tava on medium high flame. Now put the chapati on the tava and cook it for 10 to 15 seconds.
  •  Turn it on the other side and cook it for 10 to 15 seconds. You don’t have to cook the chapatis fully.
  • Repeat the same with the remaining dough.

Assembling the wraps

  • Heat the tava on medium high flame and add a tablespoon of oil to it.
  • Now place the chapati on it and cook until it turns golden brown.
  •  Flip it on the other side.
  • Now add a tablespoon of oil to it and cook it until it turns golden brown on the other side as well.
  • Place the chapati on a paper.
  • Add a tablespoon of tomato ketchup and spread it evenly.
  • Add the noodle stuffing in it.
  • Add onions on top of the stuffing.
  •  Add green chillies to it.
  • Roll it well and wrap it with a paper or tissue. Repeat the same with the remaining batches.
  • Your noodle wrap is ready to be served with ketchup or mayo. Tastes best when served hot.
