Manchow soup

Ingredients
  

  • Ginger- 1 tablespoon finely chopped
  • Garlic -2 tablespoon finely chopped
  • Green chillies- 2 to 3 finely crushed
  • Carrot- 1/2 cup finely chopped
  • Beans- 1/2 cup finely chopped
  • Capsicum- 1/2 cup finely chopped
  • Onion - 1/2 cup finely chopped
  • Tomato ketchup- 5 to 6 tablespoon
  • Soy sauce - 2 tablespoon
  • Sugar- 1 tablespoon
  • Vinegar- 1 tablespoon
  • Salt - as per taste
  • Cornflour- 5 to 6 tablespoon
  • Water- as per requirements
  • Black pepper- 1/2 tablespoon
  • Noodles- 2 to 3 blocks
  • Refined oil- 3 cups

Instructions
 

Boiling the noodles:

  •  Firstly heat a pot with 4 to 5 glasses of water.
  •  Add salt to it.
  • Add 1 to 2 tablespoon oil in it and let it boil at high flame for 5 minutes.
  • When the water has boiled, lower the flame and add the noodles in the boiling water. Cook the noodles for 2 to 3 minutes and keep checking it to avoid Overboiling.
  • Finally drain off the excess water and keep the noodles aside so that the remaining water dries off.

Frying the noodles:

  • After 10 minutes, spread the noodles on a plate.
  • Add 3 to 4 tablespoon of cornflour to the noodles.
  • mix them all together.
  •  Heat a pan with 2 cups of oil.
  •  Bring the flame to medium and add the noodles to the oil.
  • Fry for 4 to 5 minutes and let it harden and become crispy. Turn and repeat on the other side as well.
  •  Once the noodles turn golden and crispy, keep them aside. Your fried noodles are ready.

Final step:

  • Firstly chop the veggies evenly.
  •  Crush the ginger, garlic and chillies together.
  • Now heat a pan with 4 to 5 tablespoon of refined oil.
  • Add the crushed ginger, garlic and chillies to it. Saute it for a minute or so until it turns golden brown and aromatic.
  • Turn the flame to medium and slowly add all the veggies in it and saute well.
  • Add 1/2 tablespoon of salt and mix well. Cook for another 5 to 6 minutes until the veggies turn soft.
  • Add 1 tablespoon of vinegar and mix well.
  •  Add 1 tablespoon of sugar.
  • Now add 5 to 6 tablespoon of tomato ketchup.
  • Add 2 tablespoon of soy sauce. Give it a good stir and turn the flame to low.
  • Now take a glass of water and add 3 to 4 tablespoon of cornflour to it and mix it well. Add 3 tablespoon if you want a flowy consistency and 4 tablespoon of cornflour if you want a thick soup.
  • Now add 6 to 7 cups of water to the veggies and give it a good boil. Let it simmer for 8 to 10 minutes.
  • Now slowly add the cornflour mixture to the veggies stock and keep on stirring it to avoid lumps.
  • Let it boil for 2 to 3 minutes. Once it starts thickening keep on stirring it to avoid lumps.
  • Now once it turns glossy and thick, add 1/4 tablespoon of black pepper to it.
  • Finally add salt as per taste.
  • Garnish it well with freshly chopped coriander leaves.
  • Add some fried noodles on the top and mix well. your soup it ready to be served. Tastes best when served hot.
